- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cold unsalted butter, cubed
- 5–6 tablespoons ice water
- 2–3 medium tomatoes, sliced
- 1 cup shredded cheese (e.g., mozzarella or goat cheese)
- Fresh basil leaves
- Olive oil
- Balsamic vinegar (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the flour, salt, and black pepper. Add the cold butter and cut it until the mixture resembles coarse crumbs. Gradually stir in ice water until the dough holds together.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Roll out the dough into a rough circle about 12 inches in diameter on a floured surface.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper.
- Layer sliced tomatoes in the center, leaving a 2-inch border. Sprinkle cheese and fresh basil on top.
- Fold the edges of the dough over the tomatoes, pleating as you go.
- Drizzle olive oil over the tomatoes.
- Bake for 30-35 minutes, or until the crust is golden brown and the tomatoes are soft.
- Serve warm, drizzled with balsamic vinegar if desired.
Notes
For gluten-free, use gluten-free flour. Switch cheeses or add garlic powder for variation.
