Description

A warm and comforting breakfast casserole packed with savory sausage, bell peppers, and a cheesy egg topping on a bed of crispy tater tots.


Ingredients

  • 1 bag of frozen tater tots
  • 6 large eggs
  • 1 cup of milk
  • 1 cup of shredded cheddar cheese
  • 1/2 pound of cooked breakfast sausage
  • 1/2 cup of diced bell pepper
  • 1/2 cup of diced onion
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the eggs and milk, seasoning with salt and pepper to taste.
  3. In a greased casserole dish, layer the frozen tater tots evenly on the bottom.
  4. Sprinkle the cooked breakfast sausage, diced bell pepper, and onion over the tater tots.
  5. Pour the egg mixture over the sausage and veggies.
  6. Sprinkle the shredded cheddar cheese generously on top.
  7. Bake for 30-35 minutes, until the eggs are set and the cheese is golden.
  8. Let cool slightly before serving.
