- 1 bag of frozen tater tots
- 6 large eggs
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- 1/2 pound of cooked breakfast sausage
- 1/2 cup of diced bell pepper
- 1/2 cup of diced onion
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, whisk together the eggs and milk, seasoning with salt and pepper to taste.
- In a greased casserole dish, layer the frozen tater tots evenly on the bottom.
- Sprinkle the cooked breakfast sausage, diced bell pepper, and onion over the tater tots.
- Pour the egg mixture over the sausage and veggies.
- Sprinkle the shredded cheddar cheese generously on top.
- Bake for 30-35 minutes, until the eggs are set and the cheese is golden.
- Let cool slightly before serving.
