Description

A comforting bowl of taco soup packed with flavors, perfect for chilly nights or family dinners.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef broth or water
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado

Instructions

  1. Brown the ground beef or turkey with the chopped onion over medium heat until fully cooked. Drain any excess fat.
  2. Add the black beans, kidney beans, corn, and diced tomatoes with taco seasoning to the pot. Stir to combine.
  3. Stir in the beef broth or water, bringing the mixture to a boil.
  4. Reduce the heat and allow the soup to simmer for 20-30 minutes.
  5. Serve hot, topped with your choice of shredded cheese, sour cream, fresh cilantro, or avocado.

Notes

This taco soup is great for leftovers and can be stored for up to 5 days in the fridge or frozen for up to 3 months.
