Ingredients

- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef broth or water
- Optional toppings: shredded cheese, sour cream, cilantro, avocado
Instructions
- Brown the ground beef or turkey with the chopped onion over medium heat until fully cooked. Drain any excess fat.
- Add the black beans, kidney beans, corn, and diced tomatoes with taco seasoning to the pot. Stir to combine.
- Stir in the beef broth or water, bringing the mixture to a boil.
- Reduce the heat and allow the soup to simmer for 20-30 minutes.
- Serve hot, topped with your choice of shredded cheese, sour cream, fresh cilantro, or avocado.
Notes
This taco soup is great for leftovers and can be stored for up to 5 days in the fridge or frozen for up to 3 months.
