- 1 whole turkey (10–14 lbs)
- 2 tablespoons olive oil
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon smoked paprika
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Wood chips (for smoking, e.g., hickory or applewood)
Instructions
- Preheat the smoker to 225°F (107°C).
- Pat the turkey dry with paper towels.
- In a bowl, mix olive oil with garlic powder, onion powder, smoked paprika, salt, black pepper, thyme, and rosemary.
- Rub the seasoning mixture all over the turkey.
- Soak wood chips in water for about 30 minutes, then drain.
- Place the turkey in the smoker and add the wood chips.
- Smoke the turkey for about 30-40 minutes per pound until the internal temperature reaches 165°F (74°C).
- Once done, remove the turkey from the smoker and let it rest for at least 20 minutes before carving.
Notes
Make sure to have enough wood chips for continuous smoking. For added sweetness, consider brining the turkey overnight.
