- 1 lb ground beef or turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon mustard
- Salt and pepper to taste
- 4 cups cooked rice or quinoa
- Chopped parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and bell pepper. Cook until they are softened, about 5 minutes.
- Stir in the minced garlic and ground meat. Cook until the meat is browned, breaking it apart.
- Mix in ketchup, Worcestershire sauce, mustard, salt, and pepper. Simmer for about 10 minutes.
- Spoon the mixture over a bed of cooked rice or quinoa. Garnish with chopped parsley.
Notes
You can make the Sloppy Joe mixture ahead and store it in the refrigerator for up to 3 days. For a vegetarian option, use lentils or plant-based ground meat.
