Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners.
- In a large mixing bowl, whisk together the eggs and milk until well combined and slightly frothy.
- Stir in the cooked sausage, shredded cheese, diced bell pepper, salt, and pepper until everything is evenly mixed.
- Pour the egg mixture evenly into the muffin cups, filling each about 3/4 full to allow for rising.
- Bake in the preheated oven for about 18-20 minutes, or until the muffins are set and golden on top.
