- 1 can (14.75 oz) salmon, drained and flaked
- 1 cup bread crumbs
- 1/2 cup chopped onion
- 1/4 cup chopped bell pepper
- 2 eggs, beaten
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon dill weed
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the drained salmon, bread crumbs, chopped onion, chopped bell pepper, beaten eggs, mayonnaise, lemon juice, dill weed, salt, and pepper. Mix until well combined.
- Transfer the salmon mixture into a greased loaf pan and shape it into a loaf.
- Place the loaf pan in the preheated oven and bake for about 30-35 minutes, or until golden brown.
- Once done, let it cool slightly before slicing and serve warm.
Notes
For a gluten-free option, swap the bread crumbs with gluten-free breadcrumbs or cooked quinoa. Add spices for extra flavor or include various vegetables for added nutrition.
