- 8 oz pasta (penne or spaghetti)
- 2 large roasted red peppers (jarred or homemade)
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside, keeping a bit of pasta water for later if needed.
- In a blender, combine roasted red peppers, minced garlic, olive oil, heavy cream, salt, and pepper. Blend until smooth.
- Pour the blended sauce into a skillet over medium heat and bring to a gentle simmer. Stir in grated Parmesan cheese until melted.
- Add the cooked pasta to the skillet and toss until evenly coated. If too thick, add reserved pasta water to reach desired consistency.
- Garnish with fresh basil leaves before serving. Enjoy warm!
Notes
For gluten-free, use gluten-free pasta. Add red pepper flakes for heat. Substitute cheese with nutritional yeast for vegetarian option.
