Description

A creamy pasta dish with rich flavors of roasted red peppers, garlic, and Parmesan cheese, perfect for a comforting meal.


Ingredients

  • 8 oz pasta (penne or spaghetti)
  • 2 large roasted red peppers (jarred or homemade)
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, keeping a bit of pasta water for later if needed.
  2. In a blender, combine roasted red peppers, minced garlic, olive oil, heavy cream, salt, and pepper. Blend until smooth.
  3. Pour the blended sauce into a skillet over medium heat and bring to a gentle simmer. Stir in grated Parmesan cheese until melted.
  4. Add the cooked pasta to the skillet and toss until evenly coated. If too thick, add reserved pasta water to reach desired consistency.
  5. Garnish with fresh basil leaves before serving. Enjoy warm!

Notes

For gluten-free, use gluten-free pasta. Add red pepper flakes for heat. Substitute cheese with nutritional yeast for vegetarian option.
