- 2 oz vodka
- 1 oz lemon juice
- Ice cubes
- Club soda (optional)

Instructions
- Prepare the Rhubarb Syrup: In a saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil, then reduce heat and simmer for 10-15 minutes until rhubarb is tender.
- Strain the Mixture: After rhubarb is soft, strain through a fine sieve into a bowl, discarding solids, and let syrup cool completely.
- Mix the Cocktail: In a shaker, combine 2 oz of cooled rhubarb syrup, vodka, and lemon juice with ice. Shake until chilled.
- Serve Over Ice: Strain mixture into a glass filled with ice cubes.
- Add Some Fizz: Top with club soda if desired and garnish with fresh rhubarb or lemon slices.
Notes
Garnish creatively with spiralized rhubarb or fresh mint. For a non-alcoholic version, skip the vodka and increase club soda.
