Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Beat in the pumpkin puree, vanilla extract, and egg until well blended.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the rolled oats and chocolate chips if using.
  7. Drop rounded tablespoonfuls of dough onto ungreased baking sheets.
  8. Bake in the preheated oven for 10-12 minutes, or until edges are lightly browned.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
