- 1 prepared pie crust
- 2 cups fresh pineapple chunks
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon butter
Instructions
- Preheat your oven to 425°F (220°C).
- In a saucepan, combine the sugar, cornstarch, and salt. Add the fresh pineapple chunks and lemon juice, stirring until well mixed.
- Cook the mixture over medium heat, stirring continually until it thickens and begins to boil (about 5-7 minutes). Remove from heat.
- Stir in the vanilla extract.
- Pour the pineapple mixture into the prepared pie crust and dot with butter.
- Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for another 25-30 minutes, until the crust is golden brown.
- Let the pie cool slightly before serving.
Notes
Taste the filling before pouring it into the pie crust to adjust sweetness if desired. Serve warm with vanilla ice cream or whipped cream.
