A refreshing pasta salad with cheese tortellini, cherry tomatoes, spinach, and creamy mozzarella, all tossed in flavorful pesto.

- 8 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- 1/2 cup mozzarella balls
- 1/4 cup pesto sauce
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to the package instructions. Once done, drain and rinse under cold water.
- In a large bowl, combine the cooked and cooled tortellini with halved cherry tomatoes, chopped spinach, and mozzarella balls.
- Add the pesto sauce and freshly grated Parmesan cheese to the bowl. Mix everything until well combined.
- Taste and season with salt and pepper to your liking.
- Cover the salad and chill in the refrigerator for at least 30 minutes before serving.
Notes
Enhance the salad with chopped cucumbers or bell peppers for added crunch. For a gluten-free option, use gluten-free tortellini.
