Description

A refreshing pasta salad with cheese tortellini, cherry tomatoes, spinach, and creamy mozzarella, all tossed in flavorful pesto.


Ingredients

  • 8 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1/2 cup mozzarella balls
  • 1/4 cup pesto sauce
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to the package instructions. Once done, drain and rinse under cold water.
  2. In a large bowl, combine the cooked and cooled tortellini with halved cherry tomatoes, chopped spinach, and mozzarella balls.
  3. Add the pesto sauce and freshly grated Parmesan cheese to the bowl. Mix everything until well combined.
  4. Taste and season with salt and pepper to your liking.
  5. Cover the salad and chill in the refrigerator for at least 30 minutes before serving.

Notes

Enhance the salad with chopped cucumbers or bell peppers for added crunch. For a gluten-free option, use gluten-free tortellini.
