- 1 cup rolled oats
- 1 cup milk
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup vegetable oil
- 2 large eggs
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, combine the rolled oats and milk. Let them soak for 10-15 minutes.
- In another bowl, whisk together the all-purpose flour, brown sugar, baking powder, salt, and cinnamon.
- In the bowl with the soaked oats, add the maple syrup, vegetable oil, eggs, and vanilla extract. Mix well.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
Notes
These muffins are best served warm. For variations, try adding nuts or swapping ingredients for different flavors.
