Description

Mumbai Vada Pav is the ultimate comfort food that captures the vibrant essence of Mumbai’s bustling streets, featuring spiced potato balls enveloped in crispy chickpea batter served in soft bread rolls.

Ingredients

Scale
  • 4 medium-sized potatoes
  • 1 cup chickpea flour (besan)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon mustard seeds
  • 810 green chilies
  • 1 teaspoon ginger-garlic paste
  • Salt to taste
  • Oil for frying
  • 8 pav (bread rolls)
  • Green chutney
  • Sweet chutney (optional)
  • Fried green chilies (for garnish)

Instructions

  1. Boil the potatoes until tender, then mash them.
  2. In a pan, heat oil, add mustard seeds and let them pop, then sauté green chilies and ginger-garlic paste.
  3. Add spices to the mashed potatoes and combine with the sautéed mixture, form into balls.
  4. Whisk chickpea flour, a little salt, and water to make a batter.
  5. Heat oil and dip each potato ball into the batter, then fry until golden brown.
  6. Assemble by slicing the pav and spreading chutneys, then add the vada and garnish with fried chilies.
  7. Serve hot and enjoy!

Notes

For the perfect crunch, ensure your oil is hot before frying the vadas. If you prefer a spicier kick, add more green chilies to the potato filling.
