Description

These bite-sized desserts feature a crunchy graham cracker crust with a smooth and zesty key lime filling, making them the perfect treat for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups sweetened condensed milk
  • 1/2 cup key lime juice
  • 3 egg yolks
  • Whipped cream for topping
  • Lime slices for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until mixed and resembles wet sand.
  3. Press the crumb mixture into the bottom of a muffin tin to create mini crusts.
  4. Bake the crusts for 8-10 minutes until golden brown. Let cool completely.
  5. In another bowl, whisk together sweetened condensed milk, key lime juice, and egg yolks until smooth.
  6. Pour the lime filling into cooled crusts, filling nearly to the top.
  7. Bake for an additional 15 minutes. The filling should be just set but slightly jiggly.
  8. Let cool at room temperature and refrigerate for a few hours until fully chilled.
  9. Serve topped with whipped cream and a lime slice.
