Ingredients

  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked and crumbled sausage or bacon

  • 6 large tortillas
  • Salt and pepper to taste

Instructions

  1. Sauté the diced bell peppers and onions in a large skillet over medium heat until softened, about 5 minutes.
  2. In a bowl, whisk together the large eggs, adding a pinch of salt and pepper.
  3. Pour the whisked eggs into the skillet with the sautéed vegetables and scramble until fully cooked, about 3–4 minutes.
  4. Stir in the cooked sausage or bacon along with the shredded cheese until melted and well combined.
