- 6 large tortillas

Instructions
- Sauté the diced bell peppers and onions in a large skillet over medium heat until softened, about 5 minutes.
- In a bowl, whisk together the large eggs, adding a pinch of salt and pepper.
- Pour the whisked eggs into the skillet with the sautéed vegetables and scramble until fully cooked, about 3–4 minutes.
- Stir in the cooked sausage or bacon along with the shredded cheese until melted and well combined.
- Lay out the tortillas and spoon an equal amount of the egg mixture onto each one.
- Roll each tortilla tightly and place them seam side down in a baking dish.
- Cover with plastic wrap or foil and refrigerate.
- To serve, heat the burritos in the microwave or oven, and add optional toppings like salsa, avocado, or hot sauce.
