- 2 Bitter gourds (karela)
- 1 Onion, sliced
- 1 Tomato, chopped
- 2 Garlic cloves, minced
- 1 inch Ginger, minced
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Coriander
- Salt, to taste
- 2 tbsp Oil
Instructions
- Prepare the Bitter Gourds: Slice the bitter gourds in half lengthwise and remove the seeds, then slice them into thin pieces.
- Sauté the Onions: Heat oil in a pan over medium heat, add sliced onions, and sauté until golden brown.
- Add Garlic and Ginger: Once onions are golden, add minced garlic and ginger, cooking for about a minute.
- Incorporate the Tomatoes: Add chopped tomatoes and cook until softened.
- Mix in Spices and Karelas: Stir in sliced karela with turmeric, cumin, coriander, and salt.
- Fry for Crispiness: Fry the mixture for about 10-15 minutes, stirring occasionally until crisp.
- Serve Hot: Once cooked, serve hot as a side dish or main course.
Notes
For added crunch, sprinkle a bit of besan (gram flour) over the karela before frying. Serve with yogurt for a cooling effect.
