- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup ground almonds (or hazelnuts)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Raspberry or apricot jam for filling
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Combine the flour, ground almonds, cinnamon, and salt in another bowl.
- Gradually mix the dry ingredients into the butter mixture until well combined.
- Roll out the dough on a floured surface to about 1/4 inch thick and cut shapes.
- Bake on a parchment-lined baking sheet for 10-12 minutes until lightly golden.
- Allow the cookies to cool completely on a wire rack.
- Spread jam on whole cookies and place cut-out tops on them.
- Dust with powdered sugar before serving.
Notes
Chill the dough if too soft. These cookies can last in an airtight container for up to a week.
