- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 4 cups beef broth
- 8 ounces lasagna noodles, broken
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot over medium heat, cook the ground beef, onion, and garlic until browned, breaking up the meat as it cooks. Drain excess fat.
- Stir in the diced tomatoes, beef broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Mix well.
- Bring to a boil, then reduce heat to low and simmer for about 15 minutes until noodles are tender.
- Stir in the ricotta cheese and half of the mozzarella until combined and creamy.
- Serve hot, topped with remaining mozzarella, Parmesan, and fresh basil.
Notes
