Description

A cozy and comforting soup that combines all the beloved flavors of traditional lasagna in a warm, slurpable form.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot over medium heat, cook the ground beef, onion, and garlic until browned, breaking up the meat as it cooks. Drain excess fat.
  2. Stir in the diced tomatoes, beef broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Mix well.
  3. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until noodles are tender.
  4. Stir in the ricotta cheese and half of the mozzarella until combined and creamy.
  5. Serve hot, topped with remaining mozzarella, Parmesan, and fresh basil.

Notes

Great for meal prep; the flavors improve as it sits. Can sub ground turkey for beef or use low-fat cheese options.
