Description

Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons rosemary
  • 1 lemon, halved
  • 4 cloves garlic, crushed

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix together the olive oil, salt, black pepper, thyme, and rosemary.
  3. Pat the chicken dry with paper towels and rub the herb mixture all over the chicken, making sure to get under the skin.
  4. Stuff the chicken with the halved lemon and crushed garlic cloves.
  5. Place the chicken in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for about 10 minutes before carving and serving.

Notes

For extra crispy skin, start with a higher temperature for the first 20 minutes, then reduce it. This chicken pairs well with roasted vegetables, mashed potatoes, or a fresh salad.
