- 1 whole chicken
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons dried thyme
- 2 teaspoons rosemary
- 1 lemon, halved
- 4 cloves garlic, crushed
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, mix together the olive oil, salt, black pepper, thyme, and rosemary.
- Pat the chicken dry with paper towels and rub the herb mixture all over the chicken, making sure to get under the skin.
- Stuff the chicken with the halved lemon and crushed garlic cloves.
- Place the chicken in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for about 10 minutes before carving and serving.
Notes
For extra crispy skin, start with a higher temperature for the first 20 minutes, then reduce it. This chicken pairs well with roasted vegetables, mashed potatoes, or a fresh salad.
