Description

A hearty one-dish meal combining ground beef, rice, and vegetables baked in a creamy sauce, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (15 ounces) diced tomatoes
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat, breaking it apart until no longer pink. Drain excess fat.
  3. Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
  4. In a large bowl, combine the beef mixture, uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, salt, and pepper. Stir well.
  5. Pour the mixture into a greased casserole dish and spread evenly.
  6. Cover with foil and bake for 50-60 minutes, until rice is tender and liquid is mostly absorbed.
  7. If using cheese, sprinkle on top after removing the foil, then bake uncovered for an additional 10 minutes until melted and bubbly.
  8. Let cool slightly before serving.
