- 1 pound ground beef
- 1 cup uncooked rice
- 2 cups beef broth
- 1 can (10.5 ounces) cream of mushroom soup
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (15 ounces) diced tomatoes
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat, breaking it apart until no longer pink. Drain excess fat.
- Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
- In a large bowl, combine the beef mixture, uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, salt, and pepper. Stir well.
- Pour the mixture into a greased casserole dish and spread evenly.
- Cover with foil and bake for 50-60 minutes, until rice is tender and liquid is mostly absorbed.
- If using cheese, sprinkle on top after removing the foil, then bake uncovered for an additional 10 minutes until melted and bubbly.
- Let cool slightly before serving.
