Ingredients

- 4 ears of fresh corn
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1/2 red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Grill or boil the corn until cooked, about 8–10 minutes. Let it cool and cut the kernels off the cob.
- In a large mixing bowl, combine the corn kernels, diced red bell pepper, minced jalapeño, diced red onion, halved cherry tomatoes, and chopped cilantro.
- Squeeze the juice of two limes over the mixture, then season with salt and pepper to taste.
- Gently toss everything together until combined. Serve as a dip or topping.
Notes
For best flavor, let the salsa sit for 15 minutes before serving. Consider adding diced mango or pineapple for a refreshing twist.
