Description

A delightful summer salsa bursting with flavors from fresh corn, crunchy vegetables, and zesty lime, perfect as a dip or topping.


Ingredients

  • 4 ears of fresh corn
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1/2 red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Grill or boil the corn until cooked, about 8–10 minutes. Let it cool and cut the kernels off the cob.
  2. In a large mixing bowl, combine the corn kernels, diced red bell pepper, minced jalapeño, diced red onion, halved cherry tomatoes, and chopped cilantro.
  3. Squeeze the juice of two limes over the mixture, then season with salt and pepper to taste.
  4. Gently toss everything together until combined. Serve as a dip or topping.

Notes

For best flavor, let the salsa sit for 15 minutes before serving. Consider adding diced mango or pineapple for a refreshing twist.
