Description

Ingredients

  • 1/4 cup milk
  • 1/2 cup diced bell peppers (green and red)
  • 1/4 cup diced onion
  • 1/2 cup diced ham
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Sour cream and salsa for serving (optional)

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until everything is well combined and frothy.
  2. Heat a skillet over medium heat. Add the diced onion, bell peppers, and ham, cooking until the veggies are soft and fragrant, about 5 minutes.
  3. Pour the egg mixture into the skillet with the veggies and ham. Gently stir until the eggs are fully cooked. Mix in the cheese until it melts deliciously just before removing from heat.
  4. Remove the skillet from heat. Spoon an ample amount of the omelet mixture into the center of each tortilla.
  5. Fold in the sides of the tortillas and roll them up tightly to create burritos.
