Description

Ingredients

  • 2 cups cooked rice
  • 2 tablespoons curry powder
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the curry powder and cook for an additional minute.
  4. Add the mixed vegetables and cook until heated through.
  5. Push the vegetables to one side of the pan, pour the beaten eggs on the empty side, and scramble until fully cooked.
  6. Add the cooked rice to the skillet and mix everything together.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

Customize with any vegetables you have on hand. For a spicy kick, add cayenne pepper or fresh chili.
