- 4–5 lbs corned beef brisket
- 1 small head of cabbage, cut into wedges
- 4–5 large carrots, peeled and cut into chunks
- 1–2 lbs small potatoes, halved
- 1 onion, quartered
- 2–3 cups beef broth
- 2 tablespoons yellow mustard seeds
- 2 tablespoons black peppercorns
- Bay leaves
- Salt to taste
Instructions
- Place the corned beef brisket at the bottom of your crockpot.
- Pour in the beef broth and sprinkle the yellow mustard seeds, black peppercorns, and bay leaves over the brisket.
- Layer the chopped carrots, halved potatoes, and quartered onion on top of the brisket.
- Cover your crockpot and set it to cook on low for 8-10 hours.
- About 30 minutes before serving, gently place the cabbage wedges on top of the other ingredients.
- Once everything is cooked through, remove the brisket from the pot, let it rest for about five minutes before slicing, and serve with the soft, seasoned veggies on the side.
Notes
Best enjoyed warm on a chilly evening. Drizzle cooking broth over sliced beef for enhanced flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
