Description

These delightful Cinnamon Roll Cookies offer a warm cinnamon swirl in a rich, buttery cookie form, making them a cozy treat for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup powdered sugar
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the softened butter and granulated sugar together until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until well combined.
  5. In a small bowl, combine the brown sugar and ground cinnamon. Roll the cookie dough into small balls, flatten slightly, and sprinkle the cinnamon sugar mixture on top.
  6. Place the cookie dough balls on the prepared baking sheet and bake for 10-12 minutes until edges are golden.
  7. In a small bowl, whisk together the powdered sugar and milk for icing. Drizzle over cooled cookies before serving.

Notes

Chill your dough for 30 minutes before baking for firmer cookies. Store in an airtight container for up to 5 days, or freeze for 3 months.
