- 1 cup dark chocolate chips
- 4 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup powdered sugar
- Pinch of salt
Instructions
- Melt the chocolate and butter together in a double boiler, stirring until smooth. Let cool slightly.
- Whisk the egg yolks with granulated sugar and vanilla extract until pale and creamy, then stir in the cooled chocolate mixture.
- Beat the heavy cream and powdered sugar until soft peaks form. Gently fold into the chocolate mixture.
- Beat the egg whites with a pinch of salt until stiff peaks form. Carefully fold into the chocolate mixture.
- Pour mousse into a cake pan and refrigerate for at least 4 hours or until set. Serve chilled.
Notes
For a dairy-free version, substitute heavy cream with coconut cream. Garnish with fresh berries or cocoa powder.
