- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Dredge the seasoned chicken breasts in flour, shaking off any excess.
- In a large skillet, heat the olive oil and butter over medium heat. Add the chicken breasts and cook for about 4 to 5 minutes on each side until golden brown. Remove and set aside.
- Add the lemon juice, chicken broth, and capers to the same skillet. Bring to a boil, scraping up browned bits from the skillet.
- Return the chicken to the skillet and simmer for 5 to 10 minutes, until cooked through.
- Serve hot, garnished with chopped parsley.
Notes
For a gluten-free version, substitute with gluten-free flour. Add red pepper flakes for a spicy kick.
