Delicious Indian street food with tender shredded chicken wrapped in soft paratha or naan, bursting with flavor from spices and creamy yogurt.

- 2 cups cooked chicken, shredded
- 1 cup yogurt
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- Salt to taste
- 4 paratha or naan breads
- 1 onion, sliced
- 1 cup bell peppers, sliced
- Fresh cilantro for garnish
- Lemon wedges for serving
Instructions
- In a bowl, combine the shredded chicken with yogurt, garam masala, cumin powder, paprika, and salt. Stir until everything is well mixed and the chicken is nicely coated.
- Heat a tablespoon of oil in a pan over medium heat. Add the sliced onions and bell peppers. Sauté them until they are soft and just starting to caramelize, about 5 to 7 minutes.
- Add the chicken mixture to the pan with the sautéed vegetables. Cook everything together for another 5 minutes, letting the flavors meld and the chicken heat through.
- Take a paratha or naan, and place a generous amount of the chicken mixture in the center. Roll it up tightly, folding in the sides as you go to keep the filling from falling out.
- Place the rolled Kathi Rolls on a plate, garnish with fresh cilantro, and serve with lemon wedges on the side. Squeeze the lemon juice over the rolls for an extra pop of flavor!
Notes
For added heat, toss in some chopped green chilies. Use rotisserie chicken for convenience, and for vegetarian options, substitute with sautéed mushrooms or tofu.
