Description

Ingredients

  • 1 pound Cajun sausage (like andouille)
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Brown the sausage in a large skillet over medium heat until slightly crispy, then set it aside.
  2. Sauté the chopped onions and bell pepper in the same skillet until softened, then add minced garlic and cook for an additional minute.
  3. Add the long-grain rice and stir to coat with the vegetable mixture.
  4. Stir in chicken broth, diced tomatoes, Cajun seasoning, and a sprinkle of salt and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  6. Return the sausage to the skillet and mix with the rice, cooking for an additional 5 minutes.
  7. Garnish with freshly sliced green onions before serving.

Notes

For added heat, consider adding jalapeños or a dash of hot sauce. Serve warm with crusty bread or salad.
