Description

A flavorful dish that combines spicy buffalo chicken meatballs served over rice or greens, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped green onions
  • 1/2 cup buffalo sauce
  • Salt and pepper to taste
  • Cooked rice or cauliflower rice for serving
  • Lettuce or greens for serving
  • Celery sticks for garnish
  • Ranch or blue cheese dressing for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, green onions, buffalo sauce, salt, and pepper. Mix until well combined.
  3. Scoop portions of the mixture and form into meatballs (1-2 inches in diameter). Place on a lined baking sheet.
  4. Bake for 20-25 minutes until cooked through and golden brown.
  5. Serve the meatballs over cooked rice or cauliflower rice and add lettuce or greens.
  6. Garnish with celery sticks and drizzle with ranch or blue cheese dressing.

Notes

For an extra kick, try adding minced garlic or onion powder. You can also substitute ground turkey for chicken, or use gluten-free breadcrumbs.
