- 1 cup almond flour
- 1 cup oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup cocoa powder
- 1/4 cup mini chocolate chips
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine the almond flour, oats, cocoa powder, and salt. Stir them together until evenly mixed.
- In another bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.
- Add the wet ingredients to the dry mixture. Stir them together until everything is well combined and forms a cohesive dough.
- Stir in the mini chocolate chips, distributing them evenly throughout the dough.
- Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
- Chill the baking sheet in the refrigerator for about 30 minutes until the bites are firm.
- Once chilled, transfer the bites into an airtight container and store them in the fridge for up to a week.
Notes
For a nut-free option, use sunbutter instead of almond butter. You can also swap mini chocolate chips for dried fruits or shredded coconut.
