Ingredients

  • 1 lb beef stew meat
  • 1 cup barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Brown the beef stew meat over medium-high heat in a large pot.
  2. Add the chopped onion, carrots, and celery; cook for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the beef broth, add the barley, dried thyme, and bay leaf; stir to combine.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving.
  8. Garnish with fresh parsley.

Notes

For extra richness, add a splash of red wine when pouring in the broth. This dish can be made gluten-free by substituting barley with quinoa or brown rice.
