- 2 lbs beef chuck, cut into 1-inch cubes
- 4 large potatoes, peeled and diced
- 4 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.
- Add the beef cubes to the pot and brown on all sides.
- Stir in the chopped onion and minced garlic, cooking until the onion is translucent and fragrant, about 3-4 minutes.
- Toss in the diced potatoes, sliced carrots, beef broth, tomato paste, dried thyme, bay leaf, salt, and pepper. Stir to combine.
- Increase heat to high and bring the stew to a boil, then reduce heat to low.
- Cover the pot and let it simmer gently for 1.5 to 2 hours, or until the beef is fork-tender.
- Remove the bay leaf before serving and ladle the stew into bowls.
Notes
For richer flavor, use homemade beef broth or add a splash of red wine. Serve with crusty bread or over rice.
