Description

A delicious and healthy Indian dish featuring spiced bitter gourd, perfect for lunch or dinner.


Ingredients

  • 2 Bitter gourds (karela)
  • 1 Onion, sliced
  • 1 Tomato, chopped
  • 2 Garlic cloves, minced
  • 1 inch Ginger, minced
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Coriander
  • Salt, to taste
  • 2 tbsp Oil

Instructions

  1. Prepare the Bitter Gourds: Slice the bitter gourds in half lengthwise and remove the seeds, then slice them into thin pieces.
  2. Sauté the Onions: Heat oil in a pan over medium heat, add sliced onions, and sauté until golden brown.
  3. Add Garlic and Ginger: Once onions are golden, add minced garlic and ginger, cooking for about a minute.
  4. Incorporate the Tomatoes: Add chopped tomatoes and cook until softened.
  5. Mix in Spices and Karelas: Stir in sliced karela with turmeric, cumin, coriander, and salt.
  6. Fry for Crispiness: Fry the mixture for about 10-15 minutes, stirring occasionally until crisp.
  7. Serve Hot: Once cooked, serve hot as a side dish or main course.

Notes

For added crunch, sprinkle a bit of besan (gram flour) over the karela before frying. Serve with yogurt for a cooling effect.
