Description

A refreshing cocktail that combines the tangy brightness of rhubarb with lemon for a delightful drink perfect for warm afternoons.


Ingredients

  • 1 cup rhubarb, chopped
  • 1/2 cup sugar
  • 1 cup water
  • 2 oz vodka
  • 1 oz lemon juice
  • Ice cubes
  • Club soda (optional)
  • Fresh rhubarb or lemon slices for garnish

Instructions

  1. Prepare the Rhubarb Syrup: In a saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil, then reduce heat and simmer for 10-15 minutes until rhubarb is tender.
  2. Strain the Mixture: After rhubarb is soft, strain through a fine sieve into a bowl, discarding solids, and let syrup cool completely.
  3. Mix the Cocktail: In a shaker, combine 2 oz of cooled rhubarb syrup, vodka, and lemon juice with ice. Shake until chilled.
  4. Serve Over Ice: Strain mixture into a glass filled with ice cubes.
  5. Add Some Fizz: Top with club soda if desired and garnish with fresh rhubarb or lemon slices.

Notes

Garnish creatively with spiralized rhubarb or fresh mint. For a non-alcoholic version, skip the vodka and increase club soda.
