2 pounds of boneless, skinless chicken thighs (chicken breasts work tooifthat’s what you have)
3-4 chipotle peppers from a can – the ones that come in that smoky adobo sauce
2 tablespoons of that same adobo sauce from the can
4 garlic cloves, chopped up fine
2 tablespoons olive oil
2 tablespoons honey(or brown sugar if you’re out of honey)
1 tablespoon ground cumin
1 tablespoon dried oregano
2 teaspoons smoked paprika
1 teaspoon salt
½ teaspoon black pepper
Juice from 2 limes
¼ cup fresh cilantro, chopped (save some extra for sprinkling on top at the end)

1• Prep your marinade: Put all the chipotle peppers, adobo sauce, garlic, olive oil, honey, cumin, oregano, smoked paprika, salt, pepper, and lime juice in a food processor or blender. Blend until smooth. No chunks!

2• Let that chicken marinate: Place your chicken in a large ziplock or container with a lid. Pour the marinade on the chicken and add the cilantro. Seal the bag/container and massage the chicken to coat evenly. Place in the fridge for at least 2 hours, but preferably overnight – your chicken will benefit from all of that flavor.

3• Ready to cook!
If you’re grilling: Preheat your grill to medium-high heat. Cook the chicken 5-7 minutes on each side. The chicken should be cooked to 165°F in the thickest part (use a meat thermometer if you have it).

If you’re cooking on the stovetop: Preheat a large skillet over medium-high heat. Add a tablespoon of oil to the pan. Cook the chicken for 6-8 minutes on each side until cooked through.
